Who's really looking that closely at the character's eyes anyway? I know I'm not.
You're just not lonely enough.
People do when using photo mode which is likely how these shots were taken.
Photo mode generally increases the graphical fidelity too so you don't typically get this level of detail during gameplay.

We mostly look at the back of their head from 6 feet away on the couch

Depends on the game but plenty of games have close up eye or headshots to show emotions It’s a filmmaking technique after all.

Most of my favorite games are older so maybe I just notice more that most who are used to it but in certain games it cannot help but catch your attention.
