I don't think Terms and Conditions can override GDPR
If that were true, companies would do that instead of having everything opt-in.
There's no explicit consent so it's not GDPR compliant.
Do you have to opt in to online status on facebook or steam?
Steam, technically yes. You need to add someone to your friends list for them to be able to see you as online, and when you first open your account you've got restrictions on features including groups & friends that lift with time. So you can't be seen by default, can't communicate immediately, so you have time to set preferences.

Even Facebook doesn’t show your online status to everyone in the world.
