I think this can be said for a lot of stops. Many cruisers aren't adventurous and get stuck in the main shopping and bar areas. In Cozumel, my favorite thing to do is rent a car and spend the day on the east side of the island. It's so much more beautiful and natural over there. Coconuts is my go-to for lunch.
