Animal fat isn't junk food...
Mobile butcher here, it makes me happy to see that atleast one other person knows this. Animal fat is actually really good for you when grass fed (yes even bacon) but completely changes when corn fed that is why the bacon you find in stores has that horrible grease that gets everywhere.
It also depends what you do with it. It would take a lot to convince me that potatoes roasted in goose fat are any better for you than chips/french fries.
If fed on grass, veggies, bugs and other non grain foods the fat is entirly different. The meat you buy in stores even if grass fed is fed grain for a period before slaughter changing the makeup of it even on a visual level. A goose that was kept outside its whole life and never fed grain will have far less fat and even what it has will be clear or light in color. Same with most every animal but unless you know someone raising grass fed you can't get meat that has never eaten corn which WILL raise your cholesterol and clog your arteries.
